quick winter salad: gluten-free, vegan and very easy

When I realized how hungry I was a few hours ago, it was already too late to order something (because waiting another hour could have killed me) or go and get some fresh ingredients from the store nearby (those few hundred meters were too far). We mixed everything edible we could find in a bowl and the result was quite amazing – we named it “The Winter Salad”. Try it, you won’t be disappointed 😉

Salad:

  • orange
  • kiwi
  • fresh basil
  • green salad mix (endive, iceberg lettuce, radicchio)
  • cherry tomato
  • carrot
  • pomegranate
  • almond
  • chia seed
  • squash seed
  • goji

Dressing:

  • olive oil
  • lemon
  • salt
  • pepper

Delicious, colorful and super healthy! I know there are a few ingredients listed above which you don’t typically find in an almost-empty kitchen, so if you are in the same situation as me: just be creative and personalize your salad. I hope you’ll like it 😉
