gluten-free and vegan walnut bites

A super quick and delicious snack to go: gluten-free, sugar-free and vegan walnut bites.

  • 200 gram walnuts (7 oz)
  • 2 tbsp erythritol
  • 2 flaxseed egg (or real egg)
  • 0,5 tsp baking powder
  • cinnamon
  • 1 tsp agave nectar (optional)


  1. Preheat oven to 180 degrees Celsius.

  2. Chop the walnuts together with the erythritol in a big blender. You can leave it roughly chopped and it works fine with finely chopped walnuts as well.

  3. Mix all the ingredients until you get a thick batter.

  4. Form small balls (it helps if your hands are wet) and place them on a baking sheet covered with baking paper.

  5. Put them in the oven for 15-20 minutes (use only top and bottom heat!).

  6. Let them cool off and enjoy!
